Ingredients needed for Broccoli Cheddar Bites
1 large bunch of broccoli florets
2 lightly beaten eggs
1 1/2 teaspoons kosher salt
1/4 cup mayonnaise
1 cup consisting of 4 ounces, 114 grams packed
1 cup grated sharp cheddar cheese
1/2 cup, packed, torn fresh bread, with no crust
1/4 cup onion, thoroughly grated
1/4 teaspoon freshly ground black pepper
1 1/2 teaspoons lemon zest

Preparation method of Broccoli Cheddar Bites
1. Pour 1 inch of water in a pot with a steamer basket and boil them. Now, add the broccoli florets and steam them for 5 minutes until just tender. Then rinse the mix with cold water in order to stop the cooking. Then, chop the steamed broccoli florets thoroughly, so that it fills more than 2 cups.
2. Now, take a large bowl and place the beaten eggs and torn bread in it. Mix until the bread gets moistened. Add the grated onion, cheese, mayonnaise, lemon zest, salt and pepper. Now, stir in the minced broccoli.
3. Heat the oven to 350°F. Coat the wells of 2 mini muffin pans (1 dozen wells) with olive oil, so that the bites do not stick. Distribute the broccoli mixture in the muffin wells. Let it bake for about 20-25 minutes until cooked through and lightly browned on top.
