Higher Cheese level lowers cholesterol levels

A research was carried out to know why French people live for so long. Food experts have solved mystery stating that the cheese is responsible for lowering the risk of heart diseases. The study team from Aarhus University in Denmark looked into recent research on dairy products and found that cheese reduced bad-cholesterol when compared to butter with same fat content.

To further investigate this possible explanation, study leader Hanne Bertram and colleague’s team looked into how cheese is digested.

The researchers compared urine and fecal samples from 15 healthy men whose diets either contained cheese or milk, or who ate a control diet with butter but no other dairy products. They found higher levels of butyrate who consumed cheese, a compound produced by gut bacteria which is linked to reduction of cholesterol. However, further studies need to explore the exact mechanism of linking butyrate, cheese consumption and cholesterol.

The study was published in the Journal of Agricultural and Food Chemistry.
